Maro’s Banana Bread
On a different note today, I am sending you lots of love and a recipe for a lovely, easy, and healthy banana bread!
We had bananas at home that they were super ripe and almost going bad, but I definitely didn’t want to through them away. So, I decide to make a nice banana bread. I was looking for healthy recipes but most of them wouldn’t “fit” me…so I made my own recipe! Here it is!
- 3 very ripe bananas, peeled
- 1/3 cup olive oil or coconut oil (I used both)
- 1 tsp baking soda
- Pinch of salt
- 1/2 palm sugar
- 2 eggs, beaten
- 1 cups of whole grain flour
- 1/2 cup oat flour
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 1 tsp ginger
- 1/4 tsp clove
- 1/8 tsp cardamom
- Orange zest
- 50 gr chopped dark chocolate
Preheat the oven to 175°C and butter a loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the oil into the mashed bananas. Mix in the baking soda and salt. Stir in the palm sugar, beaten eggs, and all the spices. Mix in the flour.
Pour the batter into your prepared loaf pan. Bake for approximately 50 minutes at 175°C, or until a knife inserted into the center comes out clean.
Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving.
